Horse breed books and the internet are among the best sources. Here's a few of the books I have and use for my breed assignments:

Horse Breeds of North America (pocket guide version) is a small yet informative book with brief overviews of different horse and pony breeds and colors. It is compact enough to take to a model horse show with ease.
Fun Fact: Once, I was given a DZ Weedo model as a gift by someone sitting next to my table. I didn't want to show him as an Appaloosa because it is such an ordinary breed, hence, I decided to show him as a Colorado Rangerbred. The book was small enough to be put on the table without interfering with a lot of space, so I placed the book with the Colorado Rangerbred section facing out next to my horse. He earned a 2nd place ribbon, a NAN card, and a Champion rosette!

The Encyclopedia of the Horse is a large book containing the comprehensive histories of each breed along with their conformation. It's definitely too big to place on a show table, but is a great guidebook for research prior to the show.

Now, as far as websites are concerned, your best bet is to type the name of a horse breed into a search engine (Ex: Google, Bing, Yahoo!, ex.) and browse though some of the search results. Some breed association websites provide some of the most accurate information on one particular breed. I hope this helps! ;)
